Liver Loaf with Pan Gravy from 500 Delicious Dishes from Leftovers (1940)


Christmas is over and you've probably moved on to New Year's plans. But what to do with all those holiday leftovers?! Luckily, the Culinary Arts Institute (CAI) is here to save the day. "The culinary what?", you ask. Nothing but one of America's foremost organizations devoted to the science of Better Cookery, my friend. (Initial caps theirs.) I doubted anybody had any chopped tongue leftover (who does, am I right?!) so I shot past Grilled Tongue and Egg Sandwiches (PM me if you are in need!) and went for the Liver Loaf with Pan Gravy and the sliced leftover meat with Corn Bread Stuffing.
