Farewell Thanksgiving

Finished up the last of our Thanksgiving leftovers this afternoon for lunch. You know what? If I'm gonna put on five pounds in five days that's the way to do it.

Of course, we have another ten pound bird in the freezer just waiting for the right opportunity.

Ate half a Tofurky Feast late last night as a 'snack' before bed.

LOL... I'm with ya. After the Eagles game last night I stood in the kitchen and picked over the bones for about fifteen minutes.

Thanksgiving was unusually tasty this year! Mom used a fresh turkey from Wegman's, and it was one of the best ever. She brined it, used a ton of herbs, and when she removed the breast meat to cut it, sliced it "against the grain" so to speak... kind of made "medallions" out of it. (Does that make any sense?) This turkey was actually still tasty 3 days later. Stuffing was extraordinary (again, fresh herbs). Apple pie was fantastic. I gained 2lbs in 4 days. Seriously. Urp.

Ah brining... definitely the way to go. I didn't do it this year but I have another bird that I'll do mid-December and I may brine that one. I'm a big fan of the new medallion carving method. Much, much easier than trying to slice off the breast.
