Spicy Lime Pork Chops

I mentioned this recipe in the blog a week or so ago and have been meaning to post it. These turned out juicy and tasty!

Rub:
2 tablespoons minced garlic
1 tablespoon minced fresh serrano pepper
1/4 cup roughly chopped fresh oregano (you can also use cilantro)
1/4 cup fresh lime juice (about 2 limes)
3 tbsps olive oil
1 tablespoon paprika

4 boneless loin pork chops (about an inch thick)

Season chops both sides with salt and pepper. Combine rub ingredients in a small bowl and generously cover the chops with the the rub. I placed them in a casserole dish, covered them with the rub, put a lid on the dish and put them in the fridge for a couple hours.

Heat grill (or I suppose you could do these under a broiler) to medium high and grill chops 5-6 minutes each side until cooked through.

The recipe I adapted this from uses a tomato relish to finish the chops off but I just topped them with a bit of jarred salsa and then a dollop of goat cheese.
