Beer + Cheese = Beer Cheese

Tons of mail and notes to go through this morning, but one jumped out of the pack: BEER CHEESE.

It's like the reaction I had when I first heard about Beer Can Chicken. How did my life go so long without putting those two things together?

This one comes to us from the fine folks at Worldwide Recipes...

Here is an old-fashioned Southern dish that is often served with
drinks, but it makes a quick and easy first course as well.

Beer Cheese

1-3 cloves garlic, finely chopped and mashed
1 cup (250 ml) beer
1 Tbs (15 ml) Worcestershire sauce
1 tsp (5 ml) hot sauce, or to taste
1 tsp (5 ml) dry mustard
Salt and freshly ground pepper to taste
1 lb (450 g) sharp cheddar cheese, grated

Whisk together the garlic, beer, Worcestershire sauce, hot sauce,
mustard, salt, and pepper. Add the cheese 1 cup (250 ml) at a time
and beat until smooth. Pack into a 2-cup bowl or crock, cover with
plastic wrap, and refrigerate for at least 24 hours. Serve with crackers.
Serves 6 to 8.
